Steps
- Preheat the oven to 220°C / 425°F. Scrub the potatoes and put them in a large pot of cold, salted water. Pat the drumsticks very dry with paper towels. In a big bowl, toss the drumsticks with 2 tbsp olive oil, garlic powder, paprika, 2 tsp salt, and pepper until evenly coated. Stir the dipping sauce together: mayonnaise, mustard, honey, and vinegar with a pinch of salt. Set aside at room temperature.
- Bring the potatoes to a boil and cook until fork-tender, about 15 minutes. Drain well and return them to the dry pot. Add the butter, 1 tsp salt, and the remaining 1 tbsp olive oil, then roughly press each potato with a fork or the bottom of a cup so it cracks open but holds together.
